Interestingly, there was also no buildup of anthocyanins in the plasma. However, we did observe increased metabolism of the substance after meals. Overall, our findings indicate that while elderberry extract appears safe for consumption, it did not show effectiveness in altering cardiovascular disease risk in the participants studied.
